When I received my chef training in London I never imagined that I would find myself, miles from anywhere, baking Impala Wellington in a iron box over an open fire. However, one of my greatest pleasures these days is creating exciting cuisine to suit each unique individual on safari and it is tremendously satisfying to watch guests descend upon a three course meal after a full day in the bush.

Classic Safari Cuisine has served us well over the years, fueling great adventures and setting the stage for countless magical nights under the stars. Mathews Safaris would like to keep with that tradition whilst making every effort to fine-tune classic safari menus reflecting current, more health conscious, culinary trends and techniques. We are aware that the variety and quality of dining experiences available to our guests is growing by the day and we are searching for new ways to fuse International treats and Kenya's speciality foods into dishes which will make you feel truly pampered in the bush.

Our Sunburnt Chef Safaris were created in 2004 as East Africa's first safaris, designed specifically for food-lovers who wish to experience the best cuisine in the wildest places. Sunburnt Chef Safaris offer a chance to lose your inhibitions and get creative with guest chefs from East Africa's finest establishments as well as our own professional bush chefs. We build special "chef's camps" amongst the wildebeests, sample Chef's Tables at the most exquisite lodges and tackle the most spectacular seafood that the Indian Ocean has to offer. Experimenting with food in the bush, however, does come with its own unique challenges such as selecting just the right thorn tree for dangling fresh-cut fettuccine or how to reach the kitchen tent when it is guarded by a hippopotamus.
